In my search for a new breakfast routine I came across these vegan banana pancakes. I have altered the recipe a little bit so there is no added sugars to keep better control of my blood sugars. I make them at least once a week, it is such a treat to start my day with these cute and delicious little ones! Oh and if you are on a gluten free diet, these are for you too.
VEGAN BANANA PANCAKES

INGREDIENTS
- 1 ripe banana
- 1/2 cup of almond milk
- 2 tablespoons of coconut oil
- 3/4 cup of buckwheat flower
- 1 teaspoon of baking powder
DIRECTIONS
In a blender, mix the banana, almond milk and coconut oil. Add the flower and baking powder and mix again. Heat a non-stick skillet, add some coconut oil and make about six little pancakes. Serve them with your favourite toppings, for example fresh fruits, maple syrup, homemade apple sauce, soy coconut yoghurt, and walnuts. Some cinnamon and 85% chocolate for a decadent Sunday morning treat.
This usually makes me six pancakes, which serves me for two breakfasts. I keep them covered in the fridge and just preheat them the next morning with some extra coconut oil.
